Lincolnshire Poacher blends the hallmarks of an Alpine mountain cheese with a more traditional English West Country cheddar. Poacher is made by brothers Simon and Tim Jones, sourcing milk from the family herd of 230 Holstein Cows.Â
Since raw milk cheesemaking relies heavily on indigenous microflora, the Jones brothers believe that proper land management leads to better quality cheese. A healthy large scale ecosystem means that the smaller ecosystems of microflora are diverse and vibrant. The dairy is completely wind and solar powered, water is heated using a wood burner instead of gas, and cows are fed crops grown on the farm. Field peas and clover are used to cycle nitrogen back into the soil, and the surrounding hedges are habitats for local bird species.Â
The efforts of the Jones brothers come through in Lincolnshire Poacher’s excellent quality. The texture is smooth and dense, with flavors ranging from savory broth to tart fruity pineapple. The cheese is aged for 18-24 months and lovingly tended to by the dairy’s cheese robot named Florence.Â
